“We took the decision to delay bottling of the 3rd Release due to the unusually warm start to the Summer and higher sea temperature, which increases the activation rate of the cask through this year’s heating-and-cooling cycle. Distilled in 2019 at the Connacht Distillery, Co. Mayo, under Revenue supervision, this spirit was brought to Clare Island in 2019 and has been conditioning at sea aboard the Dolphin since — coming ashore each winter before returning to the water for the next season. Our 2nd Release offered a wonderful example of how this sea-conditioning process shapes the spirit.”
